Ingredients

20 lbs. Fresh Vegetable Lettuce

9.4 oz. Mustard

16 oz. Organic (for use as a salad dressing)

Freshly chopped garlic (optional)

Topping Ingredients

Cilantro, chopped

Method

Place the lettuce and cucumber into a pot full of water and set aside. In a large wok over medium-low heat, heat oil and sauté onions, garlic, thyme, red pepper, olive oil and onion until soft. Add the carrots, celery and red pepper, season with salt and pepper, sprinkle with salt and pepper and simmer for 30 minutes. Add your desired toppings and continue to cook on low heat. Stir occasionally while veggies are cooking to ensure they stay wilted. Remove from hot water, drain easily and set aside. Let the lettuce sprout (and any seeds left behind) on a rack in a clean dish. When ready to use, lay lettuce under the pan and cover with aluminum foil. Garnish with cilantro leaves and any leftover vegetables (like shredded lettuce, lettuce, tomatoes, cucumber lettuce, etc.) and serve immediately with warm salad dressing.
